From Minnesota to Arizona

A Minnesota native, Anderson discovered his passion for the culinary arts at a young age. At 19, he enrolled in Le Cordon Bleu in Mendota Heights, Minnesota, before building his experience in Minneapolis-area fine-dining restaurants, French kitchens and hotels.

His early career included positions at Valhalla, Eastside and Bellecour, followed by the opportunity to work under James Beard Award-winning chef Gavin Kaysen at Spoon and Stable. There, Anderson strengthened his leadership skills and developed a deeper understanding of fine-dining culture.

After moving to Arizona, Anderson worked under James Beard Award-winning chef Charleen Badman at FnB before joining Kai as a cook under Chef Ryan Swanson. Anderson immersed himself in the ingredients, traditions and stories of the Akimel O’otham and Pee Posh peoples through research and conversations with community members, Indigenous chefs, foragers and local producers. Following Swanson’s departure, Anderson advanced to chef de cuisine.

A culinary experience grounded in place

Today, Anderson leads Kai with a philosophy grounded in education, seasonality, local sourcing and respect for the Gila River Indian Community.

At the restaurant, Indigenous ingredients and Southwestern food traditions are presented alongside global techniques. The culinary program is guided by Akimel O’otham and Pee Posh traditions and supported by relationships with community members, cultural leaders, farmers, artisans and producers.

Anderson also fosters a collaborative kitchen culture in which chefs from different backgrounds are encouraged to learn, experiment and contribute their perspectives.

Recipe for success

Anderson’s work captures the Southwest through its land, ingredients, people and stories. At Kai, he thoughtfully combines Indigenous food traditions with contemporary global techniques while centering the culture of the Gila River Indian Community.

His partnerships with Arizona farmers, ranchers, growers and artisans strengthen the regional food system and give diners a deeper connection to place. Anderson also leads from within the kitchen, personally mentoring his team and encouraging education, experimentation and respect.

His cooking is not simply inspired by the Southwest; it actively celebrates and supports it.

Chef Drew Anderson’s impact on Arizona’s dining scene

Anderson has strengthened Arizona’s dining scene by demonstrating how fine dining can be rooted in cultural respect, regional agriculture and meaningful community relationships.

Under his culinary leadership, Kai continues to honor the traditions and stories of the Akimel O’otham and Pee Posh peoples while introducing guests to ingredients grown and produced throughout Arizona and the Gila River Indian Community.

Anderson has expanded relationships with local partners such as Ramona Farms, K4 Ranch and regional mushroom growers. Kai also works with Arizona producers and organizations including Crow’s Dairy, Rune Wines, Native Seeds/SEARCH, Mount Hope Foods, Arizona Distilling Company, Queen Creek Olive Mill and PROVISION.

These collaborations support local farmers, ranchers, artisans and entrepreneurs while helping preserve ingredients and foodways connected to the desert Southwest.

Anderson’s dishes elevate regional products without disconnecting them from their origins. Creations such as the zero-waste “Celebration of Arizona Mushrooms” showcase seasonality, technical precision and a commitment to responsible sourcing. Just as importantly, Anderson ensures that Kai’s front- and back-of-house teams understand the history behind each ingredient so they can share that knowledge with guests.

Through this approach, Anderson has helped Kai sustain its distinction as Arizona’s only restaurant to hold both AAA Five Diamond and Forbes Travel Guide Five-Star recognition. His work has elevated Arizona cuisine nationally while showing that culinary excellence can also advance education, mentorship, sustainability and community pride.
