A Champagne enthusiast’s dream + dinner

A Grower’s Champagne Dinner will be an elegant evening featuring a thoughtfully curated selection of artisan champagnes. Each option showcases the unique terroir and craftsmanship of independent French winemakers and is paired with a seasonal spring menu created by Denver Union Station Culinary Director Kevin McCormick.  

The menu for the evening will include:   

• Gougère — with Mornay
  • Paired with Vilmart and Cie ‘Grand Cellier d’Or’ Brut  
• Foie Gras Terrine — Pain d’epice, poached rhubarb, verjus, pickled strawberries and peanuts
  • Paired with L. Aubry Fils Rosé   
• Cauliflower Bisque — with crispy walleye, chive oil, cauliflower chips, pickled cauliflower, smoked almonds and pickled apple
  • Paired with Gamet ‘Rive Droite’ Blanc des Noirs Extra Brut  
• Roast Duck — with croquette, apricot mostarda, braised spinach and mustard béchamel
  • Paired with Mouzon-Leroux & Fils Champagne Grand Cru L’atavique Tradition  
• A sweet dessert by Baumé
  • Paired with Vilmart and Cie Ratafia  

Dinner details

The dinner starts at 6:30 p.m. and is priced at $150 per person. Seating is limited and advanced reservations are required here.  

The Platform Series will be held on the third Thursday of each month at Denver Union Station, with each gathering showcasing a thoughtfully curated selection of exceptional wines and spirits, ever-changing to highlight rare finds and timeless classics.
