Entering their first full winter season, Hotel Alpenrock is raising the bar on dining and nightlife in Breckenridge. Located at the base of Peak 9, the resort’s signature venues, Edwin and The Carter, are debuting fresh winter menus and elevated après experiences, while Canary continues to stand out as the region’s only speakeasy and most exclusive late-night escape.

Edwin introduces Après Vous and seasonal winter menus
Edwin, the signature restaurant at Hotel Alpenrock, debuts Après Vous, a one-hour experience offered daily from 5 to 6 p.m. that transforms après into a refined evening ritual. Featuring Grey Goose Altius martinis and Calvisius caviar, the experience highlights alpine-sourced ingredients and brings a new level of sophistication to the local après scene. Designed as the perfect transition from the last run of the day to the first toast of the night, Après Vous delivers an elevated moment before dinner begins.

“Winter in the Rockies should feel like a celebration from the last run to the final toast of the night,” says Seth Vider, executive chef ofEdwin and The Carter. “We created après menus that are bold, flavorful and comforting, and we are extending that spirit into a more elevated evening moment with our new Après Vous experience at Edwin. The goal is simple. We want guests to relax, connect and enjoy food and drinks that match the rhythm and excitement of mountain life.”
Edwin’s updated winter dinner menu showcases modern mountain cuisine that balances richness with seasonal freshness. Highlights include the Dry-Aged 30-Day Ribeye, served with charred broccolini and roasted fingerling potatoes and accompanied by a choice of peppercorn, tarragon choron or bordelaise sauce. The Truffle Grilled Mushroom Risotto layers arborio rice with sautéed asparagus, a chef’s blend of mushrooms, savory mushroom purée and lemon thyme oil. A longtime favorite, the Squash Ravioli features stuffed ravioli with toasted hazelnuts, balsamic cream, arugamula and wild arugula for a warm, seasonal entrée.

Breakfast at Edwin fuels winter adventures
Breakfast at Edwin is designed to power up winter days on the mountain. Skiers and snow-seekers can start with the Breakfast Farro, a warm blend of whole grain farro, pickled apples, dried cranberries and blueberries, fresh strawberries, almond milk, honey and seasonal winter spices. For a savory option, the Haus Benediction elevates the classic English muffin with sliced avocado, tomato, asparagus, poached eggs and smoked hollandaise, with optional additions including spinach, corned beef hash, ham steak, smoked trout, pork sausage or applewood bacon.
Anchored by a cozy open-fire artisan pizza oven and framed by sweeping mountain vistas, Edwin offers a dining experience crafted for a range of occasions, from large groups gathering in comfort to intimate date nights. Award-winning interiors feature warm tones, natural textures and striking design details inspired by namesake Edwin Carter, the 19th-century Breckenridge prospector-turned-naturalist.
Edwin is open daily for breakfast from 7 to 11 a.m. and for Après Vous and dinner from 5 to 9 p.m.

The Carter delivers a cozy après retreat
Steps from the slopes and at the heart of the action, The Carter serves as an inviting stop for a midday break or an elevated après experience. This winter, the restaurant introduces an updated après menu featuring dishes such as the Bluebird Crab Dip, made with claw and knuckle crab meat, cheese, Old Bay and vegetables and served with warm garlic butter bread.
Guests can also enjoy The Carter Bread & Butter Board with house-made baguettes, roasted garlic and herb butter, fig jam butter and cranberry relish butter. The menu is complemented by house-made pizzas, handcrafted cocktails, wine, beer and winter favorites like Breck Truffle Bites with house-made ciabatta, garlic herb butter, shaved Parmesan, white truffle oil, parsley and Maldon salt. Après is served daily from 2 to 5 p.m.

For lunch and dinner, The Carter expands its menu with Saffron Steamed Mussels featuring PEI mussels simmered in a saffron coconut broth, the Summit Cut & Crisps with a 6-ounce Coulotte steak and crisp fries and the Bison Patty Melt topped with house-made Thousand Island, Gruyère and caramelized onion on toasted rye. The pizza program continues with fresh house-made dough and a seasonal Winter Harvest pizza with rustic tomato sauce, dairy-free mozzarella, spinach, red onion, dried cranberry, butternut squash, sage and cracked rainbow peppercorn.
Open daily from 11 a.m. to 11 p.m., The Carter welcomes walk-ins on a first-come, first-served basis.

Canary remains Breckenridge’s only speakeasy
Hidden behind a discreet entrance within Hotel Alpenrock, Canary remains Breckenridge’s only true speakeasy and most exclusive nighttime destination. The jewel-box style space offers an intimate atmosphere where master bartenders craft bespoke cocktails tailored to each guest. With live entertainment on select evenings and an emphasis on creativity and discovery, Canary delivers memorable nights one custom cocktail at a time.
Canary is open seven days a week, Sunday through Thursday from 6 to 10 p.m. and Friday and Saturday from 6 p.m. to midnight.
Sustainability at the table
Hotel Alpenrock has launched a new composting partnership with BioGreen 360, reinforcing the property’s commitment to responsible mountain stewardship. The program transforms food waste from Edwin, The Carter and Canary into nutrient-rich soil, reducing the amount sent to landfills while supporting regional agricultural and landscaping efforts.
