Sushi, steaks and sound: Jing Scottsdale turns up the heat
JING Scottsdale is now open, marking the brand’s first Arizona location and fourth nationwide. Following a dramatic $11 million transformation, the 10,000-square-foot space delivers a globally inspired menu layered with subtle Asian influence and an upscale dining atmosphere.

Where sushi precision meets live-fire indulgence
At the helm is Corporate Executive Chef Thomas Griese, who has led JING’s culinary direction since 2019.
Expect:
- Hand-crafted sushi, nigiri and sashimi
- Raw bar selections and hand-folded dumplings
- Wagyu hot rock and Josper-grilled meats
- Fire-roasted and chilled shellfish platters
Signature standouts include:
- Famous Peking Duck with delicate flour wraps and hoisin
- Tuna Pizza topped with ponzu aïoli, yuzu soy and truffle oil
- Alaskan Snow Crab Roll wrapped in soy paper and finished with warm ponzu butter

The kitchen is anchored by a rare Josper charcoal oven imported from Spain, making Scottsdale the first JING location to feature this live-fire centerpiece. Fueled by Binchotan charcoal and mesquite, pecan and oak woods, the Josper delivers deep char and unmistakable flavor.
The Longbone Tomahawk and Colorado Lamb arrive with dramatic flair, while the roasted shellfish platter reads like a seafood love letter to both coasts.
A separate vegetarian and vegan menu ensures plant-based diners are equally considered.

The beverage program mirrors the kitchen’s layered intensity.

The wine list spans globally recognized labels, while the sake program highlights premium Junmai Daiginjo selections designed to pair seamlessly with sushi and grilled meats.
Standout cocktails include:
- Drunken Buddha, bright with citrus-infused vodka and pineapple, finished with a tingling Buddha Button
- Not White Duck, smoky mezcal balanced with Luxardo cherry and tamarind
- Purple Facts, featuring Purple Tanqueray gin and toasted coconut foam
Zero-proof options and rotating seasonal cocktails keep the energy fresh year-round.
Designed to shift with the night
Owned and operated by JING Hospitality Management Group, the restaurant has been completely reimagined into an ultra-chic destination.

Interior designer Heather Hassan of Chapin House collaborated with Emiko Design, CW Architecture and Harris Construction to bring the vision to life, with:
- Waterfall chandeliers
- Champagne glass inspired columns
- A wraparound statement bar
- Rich green tones nodding to the desert landscape
As the evening unfolds, programmable lighting and immersive audiovisual elements designed by SoundFX, e11even Sound and Duskworks subtly shift the mood from polished dinner service to lounge atmosphere.
Happy hour runs daily from 3 to 6 p.m., dinner begins at 6 p.m., and DJs activate the space at 7 p.m. on weekdays and 8 p.m. on weekends.
