The award-winning and longest holding Five Diamond Hotel in Denver, The Ritz-Carlton, Denver, recently unveiled the comprehensive renovation of its signature restaurant, ELWAY’S Downtown. The beloved downtown steakhouse returns with an updated look and revamped menu encapsulating the spirit of Colorado — serving the finest cuts, flavors and fresh seafood.

ELWAY’S debuts new look

“Embarking on the revamp of ELWAY’s Downtown has been an invigorating endeavor, marked by anticipation and a steadfast dedication to enhancing our dining experience,” says David Schaumburger, executive chef of The Ritz-Carlton, Denver. “We’re delighted to unveil our newly renovated space, where every detail reflects our unwavering commitment to culinary excellence and genuine hospitality. We eagerly await the opportunity to share our passion for exceptional food and unforgettable moments with the vibrant community of Downtown Denver.” 

The renovation of ELWAY’S brings an opulent, contemporary look to the restaurant and bar, featuring an elegant design that blends timeless sophistication with modern aesthetics. Guests can expect a welcoming atmosphere with comfortable seating, stylish lighting, and tasteful décor that reflects the essence of its locale. Led by Design ONE Studio, the design pays homage to NFL legend John Elway. A subtle weave of Broncos blue and orange, textured leathers and curated memorabilia artfully chronicle his storied career.

Nod to Elway’s love of sports

The design also captures Denver’s essence, blending modern, abstract furniture inspired by the city’s contemporary architecture with geometric patterns drawn from the urban landscape. This revitalized space in lower downtown Denver invites both hotel guests and locals to connect, share stories and create new memories. 

The bar scene at ELWAY’S is equally captivating, designed to honor Elway’s love of sports, with the renovated white stone bar at the center where guests can catch a game or enjoy a nightcap. Guests can also indulge in daily happy hour from 3p.m. – 5p.m., featuring specialty drinks, wines, craft beers and appetizers. The vibrant yet refined bar vibe attracts a mix of locals and visitors, providing the perfect setting for socializing, unwinding, and celebrating in style. With football season right around the corner, ELWAY’s will be gifting guests a complimentary local brew to those who show their Broncos game ticket.

Elevated menu and bar program

In addition to the new interiors, ELWAY’S has unveiled a menu inspired by the finest local ingredients and the rich flavors of Colorado cuisine. Schaumburger has curated a selection of innovative dishes that honor the restaurant’s renowned legacy while introducing new culinary delights. Standout dishes include Lamb Chop Fondue, Short Rib “Off The Bone,” Dashi Braised Chilean Sea Bass, hand-cut USDA prime steaks and a variety of sides including Thai Basil Brussel Sprouts, Au Gratin Potatoes and more.

To accompany the refreshed menu, the restaurant also features an ever-changing selection of some of the finest spirits, brews, and wines from around the world. A meal at ELWAY’S is not complete without a dessert created by Pastry Chef Stella White, who focuses on seasonal ingredients to create sweet confections including Basque Cheesecake with whipped cream and vanilla anglaise, Edgar’s Key Lime Pie with whipped cream and blueberry sauce, and Ding Dong Devil’s food cake with vanilla cream and dark chocolate ganache. 

Private dining and group accommodation

ELWAY’S Downtown is the ideal destination for groups with three unique private dining rooms that can accommodate up to 160 guests, including an exclusive Chef’s Table for up to 15 guests, with a window looking into the heart of the kitchen for an exclusive look at all the behind-the-scenes action, and #7 Elway’s Lounge curated for happy hour gatherings and group cocktail events.

A highlight of the renovation is the Stanford Room, named after John Elway’s alma mater. This private dining space can host up to four events simultaneously, accommodating between 15-50 people. These new additions make the restaurant the perfect venue for all events, providing a sophisticated and inviting atmosphere where a diverse group of people can gather, relax, make memories, and celebrate life’s victories. 

Guests staying overnight can also enjoy a taste of ELWAY’S in the comfort of their own room or suite. Often in-room dining menus are abbreviated versions of the hotel’s restaurant or cafe, however, at The Ritz-Carlton Denver, guests dining in-room can enjoy the same level of excellence they would at the signature restaurant. In-room dining is available for breakfast, lunch, and dinner every day complete with kid-friendly options, vegan/vegetarian, and an extensive selection of wine, cocktails, and beer.

To celebrate the exciting renovation, The Ritz-Carlton, Denver is offering guests a special Dine & Unwind package, available now through August 31, 2024. The package includes overnight accommodations, valet parking, and $50 dining credit to be used at ELWAY’s Downtown.
