Denver Urban Farmer hosts 5-course Beast & Bourbon Dinner

Urban Farmer Denver recently announced the 2025 Tasting Menu Dinner Series, a unique, new chef-curated tasting event held once a quarter featuring a rotating lineup of Colorado farm purveyors and distilleries.

Urban Farmer teams up with local ranch and whiskey purveyor

The first event will be a Beast & Bourbon Dinner on Tuesday, April 1. Urban Farmer Executive Chef Ryan Rau has created a delicious five-course menu highlighting American bison sourced from Rock River Ranches in Hudson, Colorado paired with spirits from Denver’s acclaimed Laws Whiskey House.

The Urban Farmer Beast & Bourbon Dinner will start at 7 p.m. and is priced at $195 per person. Non-alcoholic pairings will also be available.
- First course: Spring Bison Burrata Salad, with shaved bison bresaola, pickled kumquat and salsa verde.
- Second course: Cream Corn Risotto, with Fresno chili, mint, whipped bison butter and basil oil.
- Third course: Hot & Cold Duo, Bison Tenderloin Tartar with pickled mushroom relish, parmesan, egg yolk and a Bison Broth braised bison vindaloo, coconut foam, Fresno gremolata and cilantro.
- Fourth course: Bison Tenderloin with chateaubriand wild mushroom tea, basil, preserved lemon curry, wasabi and a bison demi-glace.
- Fifth course: Chocolate Bombe with lemon chiffon cake with chocolate ganache, bison tallow caramel and candied pecans.
