Denver Union Station adds Telluride Truffle Artisan Chocolate, Beet & Yarrow and Baumé

Denver Union Station welcomes Colorado makers with new retail kiosks now open in the Great Hall: Telluride Truffle Artisan Chocolate and Beet & Yarrow. Following shortly, Chef Kevin McCormick, a Michelin-starred Executive Pastry Chef, opens Baumé – A Dessert Bar, Wednesday, Feb. 12.

Telluride Truffle Artisan Chocolate

Started in 1997 by Patty Denny, Telluride Truffle Artisan Chocolate offers delectable handmade truffles, each with a unique and refined flavor. Popular truffles include the Black Diamond, made with dark chocolate and infused with tequila encased in a thin layer of milk chocolate and a touch of salt, and the Early Frost, made with dark chocolate and mint. Open daily, the Telluride Truffle kiosk at Denver Union Station features a wide variety of artisan truffles for purchase, with a Truffle Trio available for $15. Or take home The Fourteener, a box of 14 large truffles, for $65.  

“Denver Union Station is such an iconic building; I have always been moved by its tremendous architecture and incredible history,” says Denny. “Telluride Truffles are designed to celebrate our love for the Colorado mountain lifestyle, and I am thrilled to have this new downtown Denver outlet to share our chocolates with both locals and visitors.” 

Beet & Yarrow

Founded more than 13 years ago, Beet & Yarrow is a locally owned fresh flower, gift and plant shop offering a carefully curated selection of make-your-own bouquets, handmade ceramics, houseplants, curiosities and flower arranging workshops. Open daily from 10 a.m. – 6 p.m., the new Denver Union Station Beet & Yarrow kiosk carries grab & go wrapped bouquets and in-vase arrangements. The kiosk is in addition to Beet & Yarrow’s main floral shop, which is located in the South Broadway neighborhood. 

“I’m very excited to be in a place that has such a big city feel with lots of energy and people coming from every walk of life,” says Kimberly Hyde, owner of Beet & Yarrow. “We look forward to sharing our arrangements with the many people who pass through Denver Union Station each day.”

Baumé

Baumé will serve favorite European-inspired patisseries along with a curated Champagne list inside the newly renovated Great Hall. The patisserie menu at Baumé features a thoughtful selection of cakes and tarts designed to be familiar, craveable and an experience within their own right. One signature dish is the Citrus Tart, a perfect balance of sweet and sour with bitter and creamy. The thoughtful Baumé aesthetic presentation adds to the layers and depth in flavors. 

Baumé is led by Chef Kevin McCormick, a Michelin-starred Executive Pastry Chef with over 20 years of culinary experience, including at NewYork’s Per Se and Boulder’s Frasca Food and Wine. Continuing a pursuit of pastry excellence, McCormick worked as the Executive Pastry Chef at Chicago’s Beacon Tavern and the North Pond. In 2020, he expended his portfolio by opening Good Ambler, which quickly became a standout in Chicago’s vibrant culinary scene, earning extensive accolades including being named  “Best New Bakery” by “Chicago Magazine.” 

“One of my favorite dishes is Baumé Paris-Brest,” says McCormick. “It is named after the famous bike race from Paris to Brest and is an old school French pastry that has seen resurgence in the last few years. Our version is a play on the original with alternating seasonal flavors and textures.” 

The seated Baumé experience will be offered daily starting at 4 p.m. inside the Great Hall.  Baumé pastries and treats will also be available for purchase to-go from a retail kiosk in the Great Hall daily.
