You know in shows and movies when best friends meet at a cozy restaurant? The kind of place where the characters drink out of steamy mugs, take bites from esthetic plates and talk for hours? This is Amelia’s By EAT. It’s the cafe where friends and family gather, or you come for a date with a good book and take in the atmosphere and tasty treats.

Humble, happy beginnings

Amelia’s By EAT, named for chef and founder Stacey Weber’s grandmother, is committed to delivering the freshest locally sourced ingredients. 

“My grandmother made simple food delicious — classics like handmade pasta, made-from-scratch ice cream, classic German Spätzle with brown butter,” Weber says. “Her baking and pastries were magnificent. She made the classics shine which is what I strive to do at Amelia’s.” 

Growing up, Weber’s grandmother traded the hot Florida summers for the cool Alaskan landscape, where she resided with Weber and her family for three months. 

“She was a thoughtful, intricate cook who spent most summer days in the kitchen preparing elaborate, traditional meals,” Weber says. “She placed a high value on sitting down for an evening meal together and loved cooking for her family. You could find me by her side most summer days, studying her way around the kitchen, and experiencing the joy felt from preparing and sharing a nutritious meal with those you love.”

Tradition meets modern twists

The love Weber’s grandmother poured into every meal and into her granddaughter’s spirit lives on today at Amelia’s By Eat. Equal to creating a place where loved ones and friends can share quality time and good food, was also establishing a place that shared Weber’s philosophy of clean, whole foods and ingredients. 

“I wanted to create a place to experience a great meal and glass of wine, walk out the door feeling good, and wake up feeling even better,” Weber explains, “a place where families feel welcomed and appreciated — where I could bring my son Jack and trust there would be balanced, yummy options for him.”

Weber has been able to curate her vision, alongside introducing memorable and experiential highlights like build-your-own charcuterie and meal boards, craft cocktails, a wine shop and grab + go fridge. 

“We have a few items that have proven to be most popular and signature dishes,” she says. “I think our enchilada is leading the race and sure to please, it’s a dish I have been perfecting since the beginning of my career as a personal chef. Every element is from scratch including the organic corn tortilla, it’s so delicious slathered with our tomatillo avocado sauce and topped with a sunny-side-up egg!”

Gilbert expansion

Amelia’s By EAT in Scottsdale has been a clear success, and now Weber is expanding to Gilbert with a new micro-location at SanTan Village. A second restaurant and marketplace will soon operate the café at Kiln Gilbert, a boutique coworking space designed to gather and inspire the brightest minds of the East Valley. Amelia’s Kiln is set to open in August 2024, serving a delightful selection of breakfast, lunch and snacks, aimed to enhance the overall food and beverage offerings for Kiln members and guests.

“The team is so thrilled to be expanding to Gilbert and I think there are many good things on our horizon” Weber says. “Stay tuned for a catering menu from Amelia’s, Sunday suppers and hopefully many exciting elements that bring our delicious food to the community in the fall.”

The café will be located inside the lobby area of Kiln, located at 2162 E. Williams Field Road Suite 111 in Gilbert. The Amelia’s Kiln location will be open Monday through Friday from 9 a.m. to 4 p.m. Whether you’re looking for a quick bite or planning an event, Amelia’s has you covered.
