New luxury waterfront escape: Gaylord Pacific Resort opens spring 2025

Gaylord Pacific Resort & Convention Center, Southern California’s premier destination resort where relaxation meets entertainment, announces a spring opening date of May 15. Located 10 miles from San Diego International Airport on 36 acres of waterfront property in Chula Vista, Gaylord Pacific is the sixth resort to join the Gaylord Hotels portfolio, and the largest hotel built on the West Coast.

San Diego hotel with water park, multiple culinary offerings and more

Overseen by RIDA Development, a full-service real estate organization, the $1.3 billion resort will feature 1,600 premium guest rooms, including 89 spacious suites, a 4.25-acre outdoor water park, unobstructed ocean views, 12 culinary venues and more than 477,000 square feet of meeting and event space.

Accommodations: Gaylord Pacific joins elite, luxury hotels in San Diego

Flanked by the San Diego Bay and Chula Vista Marina, the 1,600 guestrooms and 89 spacious suites of this new luxury resort are set to evoke the feeling of a seaside destination, blending coastal elegance with residential comfort. Offering a combination of king or double queen beds, standard guestrooms will range from 389 square feet to 623 square feet, with a dedicated work area and mountain or bay views.

Executive Suites are up to 838 square feet with a separate living room and Murphy Bed and a connecting option to a neighboring queen guestroom. 

Gaylord Pacific offers premium accommodations, including six Luxury Suites featuring 1,200 square feet of sleeping and living spaces. The 10 Presidential Suites and two Penthouse Presidential Suites provide quintessential relaxation and entertainment. These suites seamlessly integrate a variety of areas, ideal for unwinding with friends and family or savoring moments with an intimate group.

Guests can expect unparalleled exclusivity within the Penthouse Presidential Suites, complete with 3,254 square feet of indoor and outdoor space, including a private furnished balcony with panoramic views of the surrounding San Diego Bay, Coronado Island and Pacific Ocean, a living room complete with a dining table for up to eight, kitchenette, bar and master bedroom with a private dressing room and soaking tub. 

Unique dining experiences led by culinary expert

Led by esteemed Chef Jakob Esko, the resort will feature 12 distinct culinary experiences ranging from fine dining options with a West Coast flair to more casual food and beverage options. Guests can watch sporting events on the 75-foot screen at Growler Sports Bar & Taproom, dine on fresh-caught lobster at Old Hickory Steakhouse, or enjoy a variety of craft cocktails and local San Diego breweries at Oeste, the expansive atrium bar. 

A Marriott veteran with Michelin-starred restaurant experience and most recently serving as the executive chef of Gaylord National, Chef Esko brings a wealth of knowledge and industry expertise to the position, setting the stage for elevated on-property culinary journeys aimed to captivate and inspire both the local community and visitors alike.

San Diego Convention Center Hotel means plenty of meetings and events space

With the addition of Gaylord Pacific, Gaylord Hotels builds on its decades of expertise in bringing people together in extraordinary ways at the country’s most desirable meeting destinations. Purpose-built to curate meetings, events and celebrations of any size and purpose, the resort boasts 477,000 square feet of indoor/outdoor space, including 135,000-square-foot event lawns and terrace, 67 breakout rooms and four exceptional ballrooms.

Featuring large balconies extending from a variety of venues, including the Chula Vista Ballroom and Bayside Ballroom, in addition to the array of culinary offerings, the resort presents a flexible stage to execute elaborate events and creative gatherings. Upon completion, the Gaylord Pacific will house the largest convention center of any hotel within the San Diego market as well as the largest ballroom with its California Ballroom & Exhibit Hall at 140,049 square feet. 

Premier San Diego hotel with water park

The Gaylord Pacific Resort & Convention Center invites guests to dive into water-focused adventure with the property’s 4.25-acre water park. Fit for all ages, the water park will feature multiple pools, action-packed waterslides, a lazy river, wave pool and more. Bookable private cabanas will be available, along with plenty of poolside lounging and two pool bars offering handcrafted libations.

Beyond the water park, additional on-site amenities include a Relâche Spa & Salon with curated treatments and programming, a 7,500-square-foot fitness center with state-of-the-art equipment, and bicycle rentals for off-property excursions. The resort is conveniently located within a seven-minute drive from Downtown San Diego, as well as nearby attractions including the San Diego Zoo and Chula Vista Elite Athlete Training Center.
